Or you can dig a stairway down until you crack open a cavern layer, then put a floor hatch over the hole and lock it to keep the cave creatures down in the caves (or a constructed floor if you're paranoid). Option two (which I prefer) is to find a hilltop, and remove all the ramps on a single z-level all the way around the sides of the hill, leaving them as impassable vertical walls with open space on top for whatever outdoor activities you require. There's no way to isolate such a pasture against flying creatures and still have it grow grass though. Building a wall around a pasture on the surface level will block that. Easiest way is to just channel the pasture area and then remove the ramps on the outer edge which will make it unreachable to non-flying creatures and the resulting channeled soil won't have boulders and whatnot (trees and bushes will still grow on it given enough time, but you can just gather/chop those every so often to keep it clear), but this still leaves your pasture open to invaders with ranged weapons.
